I brewed this “Tazinba” with expectations and awe for using precious rare grown rice that I have never experienced before.
It took several times more period than ordinally Sake brewing process while sharing the philosophy and commitments behind this challenge within our brewers carefully for coming to fruition.
The completed “Tazinba” has the gorgeous and deep aroma in first sip, then the sweetness, acidity and umami spreads gracefully with perfect harmony in the mouth.
